Breakfast

I love breakfast. It has always been one of my favorite meals. To this day , I can still remember waking up in the morning to the smell of fresh coffee brewing in the percolator and bacon frying on the stove, or the aroma of the incredible biscuits coming out of the oven. Breakfast on the ranch was a big meal and grandma’s kitchen was where the magic happened. Breakfast was important, it got you ready for a days work and for a day in school and you never skipped breakfast. Sometimes, it might be a hurried affair and you very much might have to catch it on the run, but you always had breakfast. Always as much as possible try to eat a good breakfast…it is just plain good for you.

  • 1/4 stick butter
  • 3 tbsp flour
  • 1 jalapeno stemmed, seeded, and diced
  • 2 cups buttermilk
  • 1 14 oz can diced tomatoes
  • 1/4-1/2 cup water

  1. In a skillet over medium heat place butter and melt.
  2. Add flour and mix well to completely combine and form a roux.
  3. Add buttermilk and stir well.
  4. Add diced tomatoes and stir well.
  5. Add enough water to cut mixture and stir well.
  6. Salt and pepper to taste.

  • 1/4 cup sugar
  • 2 1/2 tsp baking powder
  • 3/4 tsp salt
  • 1 egg beaten
  • 3/4 cup milk
  • 1/3 cup shortening melted
  • 1 cup blueberries fresh or frozen, well drained
  • 2 tbsp sugar

Gently fold berries into batter. Spray muffin pan with nonstick spray or use muffin cups. Fill 2/3 full and bake at 400 degrees for 25-30 minutes.

  • 1 cup bananas mashed
  • 1 1/4 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup walnuts or pecans chopped (optional)

  1. In a mixing bowl blend together eggs, buttermilk, oil and bananas until well combined. Sift together all dry ingredients and add to wet mixture and mix well. (At this time if you like you can fold in chopped nuts.) Pour batter into a loaf pan that has been sprayed with nonstick spray. Bake at 325 for about 1 hour and 20 minutes or until a knife inserted in the middle comes out clean. Cool completely. Cut bread into about ½ inch slices.

  • 1 loaf banana bread sliced in 1/2 thick slices
  • 3 eggs
  • 1 tbsp powdered sugar
  • few drops vanilla
  • 2 tbsp butter

  1. Whip ingredients together until completely combined. Melt 2 tbsp butter in a skillet over medium heat. Dip slices of banana bread in batter and place in skillet. Nicely brown on both sides. You can garnish with whipped cream and powdered sugar.

  • 1 cup cheese shredded, mixed
  • 1 cup brisket chopped
  • 2 tbsp onion chopped
  • 1-2 jalapenos stemmed, seeded and diced
  • 1 cup red & green bell pepper chopped (optional)

  1. In a large bowl beat eggs. Add all other ingredients and mix well. Spray a baking pan with non-stick spray. Pour mixture into baking pan and place in a preheated 350 degree oven. Bake for 30-40 minutes or until a knife inserted in the middle comes out clean.
  2. Right before it is ready mix together: 1 cup mixed shredded cheese 2 tbsp chive 1/2 cup diced tomato Spread evenly on top of casserole. Place back in oven until cheese is melted. Serve this up with some good home fries and some buttermilk biscuits gravy, but be careful - your guests may never leave.
