Stove Top Taco Casserole


  • 1 1/2 pounds ground beef
  • 1/2 yellow onion diced small
  • 1/2 green bell pepper diced small
  • 2 tbsp garlic minced
  • 1 cup whole kernel corn
  • 1 can black beans drained well
  • 2-3 tbsp flour
  • 2 cups beef broth
  • 2 cups crushed corn tortilla chips
  • 1 cup shredded lettuce
  • 1 cup shredded mixed cheese


  • In a large skillet over medium heat place ground beef. Break it up as you cook it.
  • Add onion, bell pepper and minced garlic. Cook until ground beef browns
  • Add black beans and corn and stir to combine.
  • Add flour and mix well to form a roux.
  • Add beef broth and stir to complete combine and bring back to a boil.
  • Lower heat to low.
  • Add half of the crushed corn tortilla chips and mix well. Remove from heta.
  • Top with the rest of the tortilla chips, shredded lettuce, diced tomatoes.
  • Garnish with dabs of sour cream and guacamole (optional).
