Roasted Pork Loin with Apple Sausage Stuffing


  • 3 pound pork loin
  • 1 tbsp. salt
  • ½ tbsp. pepper
  • 1 Tbsp granulated garlic

Apple Sausage Stuffing

  • 1 tbsp. butter
  • 2 Granny Smith apples, peeled and diced
  • 2 tbsp. diced onion
  • 1 tbsp. minced garlic
  • 2 tbsp. bell pepper, minced
  • 1/2 lb. breakfast sausage
  • 1 tsp. sage
  • 1/2 tsp. chili flakes (optional)
  • 1/4 cup cream
  • salt and pepper to taste


  • Mix together all seasonings and generously season pork on all sides.
  • In a large skillet over medium heat add 1 tbsp. olive oil. When pan and oil is hot sear pork loin on all sides. Remove and let cool.

Apple Sausage Stuffing

  • Stir well to completely combine.
  • Add cream and stir well.
  • Remove from heat and let cool completely.

Stuffing the Pork Loin

  • If you have a long sharpening steel, place the cool loin on its end and
    push your steel through the loin starting in the center or…use a large carving
    knife and gently starting at on end run it through the loin in the center. Then
    simply push your stuffing in.


  • Roast your loin in a preheated 350 degree oven for 35- 40 minutes or
    until you reach an internal temperature of 155 degrees.
  • Remove loin and let rest for 10 minutes before slicing.
