North Texas Sausage & Potatoes

Ingredients

  • 3-4 Russet potatoes peeled and diced
  • 2 tbsp olive oil
  • 1/2 red onion sliced
  • 1 tbsp garlic minced
  • 1 1/2 cups chicken broth
  • 1 package Kielbasa sausage diced
  • salt and pepper to taste

Instructions

  • In a large skillet over medium heat place olive oil
  • Add potatoes, onions and garlic
  • Sauté stirring often for about 2 minutes
  • Add sausage and stir to combine
  • Add chicken broth and stir well
  • Reduce heat to low and cover
  • Stir occasionally until potatoes are soft
  • Salt and pepper to taste
  • Garnish with diced tomato and diced green onion
