
Ingredients
- 3-4 Russet potatoes peeled and diced
- 2 tbsp olive oil
- 1/2 red onion sliced
- 1 tbsp garlic minced
- 1 1/2 cups chicken broth
- 1 package Kielbasa sausage diced
- salt and pepper to taste
Instructions
- In a large skillet over medium heat place olive oil
- Add potatoes, onions and garlic
- Sauté stirring often for about 2 minutes
- Add sausage and stir to combine
- Add chicken broth and stir well
- Reduce heat to low and cover
- Stir occasionally until potatoes are soft
- Salt and pepper to taste
- Garnish with diced tomato and diced green onion
