Corn Bread Chicken

Ingredients

  • 1 ½ cups yellow corn meal
  • ½ cup flour
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1 ½ tbsp bacon grease
  • 1-1 ½ cups milk
  • 2 eggs beaten
  • 1 can small can (8.5) whole kernel corn drained well
  • 3 tbsp minced onion
  • 1 cup shredded mixed cheese
  • 2-4 cups diced chicken

Instructions

  • In a large bowl sift together all dry ingredients.
  • Add eggs, milk and bacon grease.
  • Stir to mix well and completely combine.
  • Add corn and cheese and fold in.
  • Season chicken with salt and pepper and fold into batter.
  • Pour batter into baking pan that has been sprayed with nonstick spray.
  • Back in a preheated 425 degree oven for 20-25 minutes or until done.
