Cheddar Chive Mashed Potatoes


  • 4 russet potatoes peeled and diced
  • 4 tbsp. butter
  • 1 cup millk
  • 1 cup grated cheddar
  • ¼ cup diced green onion green only
  • Salt and pepper to taste


  • In a large sauce pan over medium high heat place potatoes and cover with water.
  • Bring to a boil and cook until potatoes are soft and tender.
  • Drain well.
  • Add butter and milk and mix on medium speed until smooth.
  • Add cheese and chives and fold in to completely combine.
  • Salt and pepper to taste.
