- 4 russet potatoes peeled and diced
- 4 tbsp. butter
- 1 cup millk
- 1 cup grated cheddar
- ¼ cup diced green onion green only
- Salt and pepper to taste
- In a large sauce pan over medium high heat place potatoes and cover with water.
- Bring to a boil and cook until potatoes are soft and tender.
- Drain well.
- Add butter and milk and mix on medium speed until smooth.
- Add cheese and chives and fold in to completely combine.
- Salt and pepper to taste.
