Cauliflower Cheese Gratin

Ingredients

  • 1 head cauliflower cleaned and rough chopped
  • 1 tbsp. butter
  • ¼ cup minced red onion
  • 1 tbsp. minced garlic
  • 1 tbsp. flour
  • 1/2 cup milk
  • ½ cup chicken stock
  • 2 eggs
  • 1 ½ cup shredded cheddar cheese
  • 1 cup bread crumbs
  • Salt and pepper to taste

Instructions

  • In a large skillet over medium heat melt butter.
  • Add onions and saute for about 1 minute.
  • Add garlic and continue to saute until slightly browned.
  • Add flour and stir to completely combine.
  • Mix milk, chicken stock and egg together until completely combined and then pour into skillet.
  • Stir to form sauce.
  • If it is too thick add a little more chicken stock.
  • Add cheese and stir to completely melt cheese.
  • Add cauliflower and bread crumbs and stir to completely combine.
  • Salt and pepper to taste.
  • Pour mixture into baking pan and place in 350 degree oven for 25-30 minutes.
