Cattlemen's Chili

Ingredients

  • 1 tbsp. olive oil
  • ½ yellow onion diced
  • 1 bell pepper diced
  • 2 tbsp. minced garlic
  • 1 tbsp. tomato paste
  • 1 ½ pounds chuck cubed
  • 5 tbsp. flour
  • 3 cups beef stock
  • 1 large can 28 oz. whole peeled tomatoes diced
  • 2 tbsp. ground cumin
  • 1 tbsp. chili powder
  • Salt and pepper to taste

Instructions

  • In a large pot over medium high heat place olive oil.
  • Add onions, bell pepper and garlic and tomato paste cook for about 1 minute.
  • Add cubed chuck and continue cooking until meat is slightly browned.
  • Add flour and stir to combine thoroughly.
  • Add tomatoes and beef stock and stir to completely combine.
  • Add all seasonings and stir to combine.
  • Reduce heat and simmer until beef is tender stirring occasionally.
