Place diced peaches in a bowl and add 2 tbsp brown sugar and mix well.
In a large bowl on medium speed mix eggs, egg yolk, melted butter, sugar and brown sugar until well blended mixed.
Add flour and vanilla and mix again.
In a separate bowl mix egg white until soft peaks form and then fold into batter.
In a large baking pan or casserole place diced bread and peaches and stir to combine well.
Pour in batter and stir to blend to make sure all bread gets wet.
Gently press down bread to saturate.
Place in a preheated 350 degree oven for 30 – 35 minutes or until a sharp knife inserted in the center comes out clean.
