Brown Sugar Peach Bread Pudding


  • 2 eggs
  • 1 egg yolk
  • 2 tbsp melted butter
  • ¼ cup flour
  • ¼ cup sugar
  • ¼ cup packed brown sugar
  • 1 tsp vanilla
  • 1 egg white
  • ½ tbsp baking powder
  • 6 slices Hawaiian bread
  • 2 cups diced frozen peaches
  • 2 tbsp brown sugar


  • Place diced peaches in a bowl and add 2 tbsp brown sugar and mix well.
  • In a large bowl on medium speed mix eggs, egg yolk, melted butter, sugar and brown sugar until well blended mixed.
  • Add flour and vanilla and mix again.
  • In a separate bowl mix egg white until soft peaks form and then fold into batter.
  • In a large baking pan or casserole place diced bread and peaches and stir to combine well.
  • Pour in batter and stir to blend to make sure all bread gets wet.
  • Gently press down bread to saturate.
  • Place in a preheated 350 degree oven for 30 – 35 minutes or until a sharp knife inserted in the center comes out clean.
