There are meatballs and then there are Texas meatballs…these babies are so tasty with a spicy Tex-Mex tomato sauce and they are so easy to make. They are great as an appetizer or on a buffet and your family and friends will think you are a rock star.

West Texas Meatballs

  • 1 lb ground beef
  • 1 egg
  • 1/4 cup onion diced
  • 1/4 cup green bell pepper diced
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tbsp garlic powder

  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1 tsp chili powder

  • To make meatballs, mix all ingredients together except flour until completely combined, and form into balls. Place enough oil in a skillet to just cover the bottom. When pan is hot, place meatballs in skillet and just sear and remove from pan.
  • Place all sauce ingredients in blender and blend well. Add 1 tbsp flour to oil in the pan, mix well. Add tomato sauce and stir to completely combine. Place meat balls back in skillet and stir to combine and coat all meatballs in sauce. Lower heat to low and simmer for 20-30 minutes or until meat balls are completely done.
