Ingredients
  • 1 can black beans washed and drained well
  • 2 cups frozen whole kernel corn
  • 1/2 green bell pepper diced small
  • 1/2 red bell pepper diced small
  • 1/2 red onion diced small
  • 1 jalapeno stemmed and, seeded and diced small
  • 1 tomato diced small
  • 1 tbsp garlic minced
  • salt and pepper to taste
  • Chipotle Cream Dressing
  • 1 cup mayo
  • 2 tbsp sour cream
  • juice of 1 lime
  • 1/4 tsp pepper
  • 1/2 tbsp garlic minced
  • 2 tbsp chipotle salsa

  1. In a bowl mix all ingredients to completely combine.
Chipotle Cream Dressing
  1. Combine all ingredients and mix well.
  2. Pour dressing over salad mix and stir to completely combine.
  3. Refrigerate.

  • 1/2 onion diced small
  • 1/2 carrot diced small
  • 1 tbsp garlic minced
  • 1 tbsp flour
  • 2 tbsp beef base
  • 1/2 tomato diced small
  • 1 tsp pepper
  • 1 tsp basil
  • 1/2 tsp thyme
  • 1/2 cup whole kernel corn
  • 4 cups water

  • 1 pound ground beef
  • 1 celery rib diced small
  • 1/2 onion diced small
  • 1/2 carrot diced small
  • 1 tbsp garlic minced
  • 1 tbsp flour
  • 2 tbsp beef base
  • 1/2 tomato diced small
  • 1 tsp pepper
  • 1 tsp basil
  • 1/2 tsp thyme
  • 1/2 cup whole kernel corn
  • 4 cups water

  1. In a large pot over medium heat place ground beef.
  2. Cook until well browned and then remove from pot and drain well.
  3. Place onions, celery, garlic and carrots in pot with beef dripping and sauté for about 3 minutes.
  4. Add flour and mix well to completely combine.
  5. Add beef base and mix well.
  6. Add water and stir to completely combine.
  7. Add cooked ground beef back into pot and stir.
  8. Add tomatoes and corn and seasoning and stir to combine.
  9. Bring to a boil then reduce heat and simmer for 5 minutes.
  10. Adjust seasoning and serve.

Ingredients
  • 1/2 pound fresh asparagus
  • 1 quart water
  • 1 large tomato diced
  • 1/2 red onion diced
  • 1 cup blue cheese crumbles
  • 1 tsp oregano
  • 1 tbsp garlic minced
  • 1/2 cup olive oil
  • juice of 1 lemon
  • 1 tbsp apple cider vinegar

  • 1/2 pound fresh asparagus
  • 1 quart water
  • 1 large tomato diced
  • 1/2 red onion diced
  • 1 cup blue cheese crumbles
  • 1 tsp oregano
  • 1 tbsp garlic minced
  • 1/2 cup olive oil
  • juice of 1 lemon
  • 1 tbsp apple cider vinegar

  1. In a medium sauce pan over high heat place water and bring to a boil.
  2. Reduce heat to a low and add asparagus.
  3. Blanch asparagus for about 2 minutes then remove from water and drain well.
  4. In a large bowl add tomato, onion, garlic.
  5. Cut asparagus into thirds and add to bowl.
  6. Add blue cheese.
  7. Combine olive oil, vinegar and lemon juice and stir very well to combine and pour over salad.
  8. Add oregano and toss to combine.
  9. Salt and pepper to taste.
  10. Refrigerate.

  • 1 cup celery diced
  • 1/2 cup red pepper diced
  • 1 tbsp garlic powder
  • 1/2 tbsp thyme
  • salt and pepper to taste
  • 1 1/2 cup mayo
  • 1 cup boiled egg chopped
  • 1/2 cup peas optional

  • 1 tbsp garlic powder
  • 1/2 tbsp black pepper
  • 1 tsp dill
  • 1 cup mayo
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar

  • 1/4 cup onion finely minced
  • 2 cups chicken stock divided
  • 1/4 cup bell pepper finely minced
  • 1 teaspoon ground cumin
  • 1 clove garlic finely minced
  • 1 teaspoon chili powder
  • 1/4 cup cilantro finely minced
  • 2 boneless chicken breasts
  • 1 tablespoon butter
  • 1 tablespoon liquid smoke
  • 2 cans black beans
  • 1/4 cup heavy cream

  1. Preheat oven to 350 degrees.
  2. Melt butter in a medium saucepan, and place onion, bell pepper, garlic, and cilantro.
  3. Cook until onions are tender, then add black beans with the juice and one cup of chicken stock.
  4. Bring to a boil, reduce heat, and add cumin and chili powder.
  5. Let simmer for about 15 minutes, stirring occasionally.
  6. While the soup is simmering, place chicken breasts on a cookie sheet.
  7. Baste with the liquid smoke, and season with salt and pepper.
  8. Bake in the oven for 7-10 minutes or until completely cooked.
  9. Shred the chicken.
  10. Place soup mixture in blender.
  11. Add heavy cream and blend on low speed until smooth.
  12. Add more chicken stock if needed.
  13. Adjust seasonings as needed, pour into bowls, and garnish with shredded chicken.

  2. Add chicken base and seasonings.
  3. Bring to a boil, then reduce heat to medium-low and cook until vegetables are soft.
  4. Add noodles and cook until noodles are done (about eight minutes).
  5. Taste, adjust seasonings as needed, and serve hot.

  • Pico de Gallo
  • 1/2 yellow onion
  • 1-2 jalapeno peppers seeded and stemmed
  • 1 tomato sliced
  • 1/2 cup fresh cilantro chopped
  • juice of 2 limes
  • 1 tbsp garlic minced
  • Coleslaw
  • 1 half head cabbage
  • 1 cup mayo

  • 1/2 yellow onion
  • 1-2 jalapeno peppers seeded and stemmed
  • 1 tomato sliced
  • 1/2 cup fresh cilantro chopped
  • juice of 2 limes
  • 1 tbsp garlic minced
  • Coleslaw
  • 1 half head cabbage
  • 1 cup mayo

Instructions
To make Pico de Gallo:
  1. Slice your onion as thin as possible.
  2. Cut your jalapeno in half and then julienne thin.
  3. Take your sliced tomato and julienne the slices.
  4. Mix all ingredients together in a bowl until completely combined and refrigerate.
To make Coleslaw:
  1. Core your half cabbage and then slice as thin a possible and place in a large bowl.
  2. Add Pico De Gallo and mayo.
  3. Mix well to completely combine.
  4. Salt and pepper to taste.
  5. Refrigerate.
