Ingredients
  • 1 pound shredded chicken
  • 1/2 cup Buffalo sauce
  • 1/2 cup green onion chopped, green only
  • salt and pepper to taste
  • 4-5 egg roll wrappers
  • 1 egg
  • 1/4 cup water
  • 1 1/2 cup corn meal
  • 1 tsp salt
  • 1/4 tsp pepper

  • 1 pound shredded chicken
  • 1/2 cup Buffalo sauce
  • 1/2 cup green onion chopped, green only
  • salt and pepper to taste
  • 4-5 egg roll wrappers
  • 1 egg
  • 1/4 cup water
  • 1 1/2 cup corn meal
  • 1 tsp salt
  • 1/4 tsp pepper

Instructions
  1. Oil for frying enough to completely cover egg rolls
  2. in a skillet or fryer preheat oil to 350 degrees.
  3. In a bowl place shredded chicken, buffalo sauce and chopped green onion.
  4. Mix well to completely combine.
  5. Salt and pepper to taste.
  6. Mix egg and water very well.
  7. Mix corn meal and salt and pepper until completely combined.
  8. Place 3 oz. of chicken mixture on egg roll wrapper.
  9. Fold over ends and then roll tightly about half way.
  10. Brush edges with egg wash and finish rolling to seal.
  11. When oil is hot, brush rolls with egg wash and very lightly coat with corn meal mixture.
  12. Place egg rolls in hot oil one at a time and fry until golden brown.
  13. Remove and drain.

  • 1 package cheddar jalapeno sausage

  1. Remove biscuit and cut into quarters.
  2. Cut sausage into ½ inch slices.
  3. Take a quarter of biscuit dough and flatten out place sausage slice on dough and pull edges over to completely cover then roll in palms to form ball place on a baking sheet that has been spray with non-stick spray.
  4. Bake at 350 degrees until golden brown.
  5. Mix melted butter with chipotle salsa brush on poppers and serve.

  • 2 tbsp garlic minced
  • 1 tbsp chicken base
  • 2 tsp cumin
  • 12 oz sour cream
  • 2 tbs green onion minced

  1. Peel and quarter tomatillos and place in sauce pan and cover with water.
  2. Bring to a boil over medium high heat and cook until soft.
  3. Drain well and place tomatillos in blender.
  4. Add chicken base and cumin.
  5. Blend until smooth.
  6. Pour into bowl and add green onion and sour cream.
  7. Mix until completely combined.
  8. Salt and pepper to taste.
  9. Place in refrigerator until it sets.

  • 1 can kidney beans
  • 3 tbsp chili powder
  • 4 tbsp cumin

  6. Add flour and stir well until completely combined.
  7. Add diced tomatoes and beef broth stir until completely combined.
  8. Drain beans well and add to chili and stir.
  9. Add chili powder and cumin and salt and pepper to taste.
  10. Add ½ cup bourbon and stir well.
  11. Reduce heat to low simmer and let simmer for about ½ hour stirring occasionally.

  • 6 6 baby Yukon Gold potatoes
  • 1/4 cup cooking oil
  • 1 tbsp garlic minced
  • 2 tbsp sour cream
  • 2 tbsp green onion diced
  • 1/2 cup mixed shredded cheese
  • 6 strips bacon cut in half
  • BBQ sauce
  • salt and pepper to taste

  1. Place potatoes in a bowl and pour in oil. Completely coat potatoes with oil and then salt and pepper them. Place potatoes on a baking sheet and bake at 350 degrees until potatoes are soft. Slightly cool potatoes and then carefully slice in half. Scoop out potato being careful not to tear or break potato. Place potato meat in bowl and add garlic, sour cream, green onion and cheese, salt and pepper to taste. Stir mixture well until completely combined and smooth. Fill each potato skin with mixture and then wrap with bacon. Place on a baking sheet with bacon seam down. Baste with BBQ sauce and bake at 350 degrees for about 15-20 minutes, basting with BBQ sauce several times during baking. Remove from oven and eat your little heart out…these things are so good and you will absolutely WOW your friends and family when they see these.

  1. In a skillet over medium-low heat, melt butter. Add garlic, onions, & seasonings. Saute mixture stirring constantly until onions are completely caramelized and browned. Add water and beef base or bullion cube, stir thoroughly and continue cooking until almost all of moisture is reduced. Add BBQ sauce and stir to completely incorporate. Remove from heat and pulse 3 or 4 times in a blender or food processor. Place mixture in bowl and add sour cream. Mix well until completely combined, refrigerate.

Lower heat to low and simmer for about 45 minutes, adding more broth as needed and stirring occasionally. Adjust seasonings and serve.

  1. To make meatballs, mix all ingredients together except flour until completely combined, and form into balls. Place enough oil in a skillet to just cover the bottom. When pan is hot, place meatballs in skillet and just sear and remove from pan.
  2. Place all sauce ingredients in blender and blend well. Add 1 tbsp flour to oil in the pan, mix well. Add tomato sauce and stir to completely combine. Place meat balls back in skillet and stir to combine and coat all meatballs in sauce. Lower heat to low and simmer for 20-30 minutes or until meat balls are completely done.

  • 1 small yellow or red onion diced
  • 1 cup celery diced
  • 1 cup mayo

  • 1/2 tsp black pepper

Refrigerate.
