I have a confession. I love deviled eggs and any excuse I can find to make some is alright with me…when I was a boy growing up, we always had hard boiled eggs in the fridge. These are pretty tasty and contrary to what a lot of people believe they are pretty easy to make.
The Texas Chef's Bacon and Deviled Eggs
- 6 eggs hard-cooked and halved, lengthwise
- 1/2 tsp yellow mustard
- 1 tbsp onion minced
- 1 tbsp chives minced
- 1/2 tsp red wine vinegar
- 1/4 tsp garlic minced
- 3-5 drops hot sauce
- 1-3 drops liquid smoke
- 2 strips bacon minced small, rendered until crisp and drained well
- In a bowl place egg yolks and all other ingredients except for bacon. Salt and pepper to taste. Mix well until smooth. Spoon mixture into egg whites and top with bacon.
