Texas Shrimp Salad

Ingredients

  • 2 cups baby shrimp cooked, drained, cooled
  • 1 jalapeno stemmed, seeded and diced
  • 2 tbsp red onion chopped
  • 2 tbsp celery diced
  • 2 tbsp red bell pepper diced
  • 2 tbsp green bell pepper diced
  • 1 tbsp garlic minced
  • juice of 1/2 lime
  • 3 tbsp mayo
  • 1/4 tsp mustard
  • 5 drops hot sauce
  • 1 tsp chipotle salsa

Instructions

  • In a bowl place shrimp, jalapeno, onion, bell peppers, celery, garlic, and juice of 1/2 lime, mix well to completely combine. To make dressing combine all ingredients and mix well until smooth. Pour dressing over shrimp mixture and stir to completely combine. Cover and refrigerate for at least 1 hour.
