I love potato salad. I don’t know who invented it, but whoever it was…he should be given a medal and a national holiday. It is a great dish and goes with just about anything. The perfect accompaniment to BBQ, fish, backyard cook outs, buffets or even Sunday dinners. There are endless variations to it and it I so easy to make, no matter the recipe. This is a potato salad with a flavor of dill and red potatoes that hearkens back to the ranch and summer afternoons.
