Mini Bacon Wrapped BBQ Twice Baked Potatoes


  • 6 6 baby Yukon Gold potatoes
  • 1/4 cup oil
  • 1 tbsp garlic minced
  • 2 tbsp sour cream
  • 2 tbsp green onion diced
  • 1/2 cup mixed shredded cheese
  • 6 strips bacon cut in half
  • BBQ sauce
  • salt and pepper to taste


  • Place potatoes in a bowl and pour in oil. Completely coat potatoes with oil and then salt and pepper them. Place potatoes on a baking sheet and bake at 350 degrees until potatoes are soft. Slightly cool potatoes and then carefully slice in half. Scoop out potato being careful not to tear or break potato. Place potato meat in bowl and add garlic, sour cream, green onion and cheese, salt and pepper to taste. Stir mixture well until completely combined and smooth. Fill each potato skin with mixture and then wrap with bacon. Place on a baking sheet with bacon seam down. Baste with BBQ sauce and bake at 350 degrees for about 15-20 minutes, basting with BBQ sauce several times during baking. Remove from oven and eat your little heart out…these things are so good and you will absolutely WOW your friends and family when they see these.
