One of my favorite things as a kid growing up, and still to this day, are pancakes. When I was growing up, we called them hot cakes and my grandma and my mother could make them in all shapes and flavors. My favorite was what my grandma just called corn cakes, and the name says it all. Made from flour and corn meal with butter and warm syrup…it was a spectacular and special breakfast that was usually saved for Saturday or Sunday mornings .This is a great breakfast that I am sure your family and friends will enjoy…and who knows…it just might make you famous.

Granma's Corn Cakes


  • 4 eggs beaten
  • 1 1/2 cups buttermilk
  • 1 cup cornmeal
  • 1 cup flour
  • 1/4 cup sugar
  • 1/2 tsp baking powder
  • pinch salt


  • In a large bowl whisk together wet ingredients. Sift in dry ingredients and stir until well blended. Preheat your griddle or skillet to 350 degrees. Spray or pour a little melted butter on it and pour batter to form pancakes. Cook until browned and then flip to finish.
