Bourbon Portobello Chicken

Ingredients

  • 2 tbsp olive oil
  • 4 chicken breasts split in half
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp garlic minced
  • 2 tbsp butter
  • 3 Portobello mushrooms diced
  • 2 tbsp red onion minced
  • 1 cup bourbon
  • 2 tbsp flour
  • 4 cups water
  • 2 tbsp beef base

Instructions

  • In a large skillet over medium high heat add place olive oil and minced garlic.
  • Add chicken breast and season with salt and pepper.
  • Sear chicken until nicely browned and then remove from pan.
  • Reduce heat.
  • Add butter, onions and mushrooms.
  • Lightly sauté for 2 minutes.
  • Deglaze with 1/2 cup of bourbon.
  • Add flour and stir to completely combine.
  • Add water and beef base and stir to thoroughly combine.
  • Add 1/2 cup of bourbon and stir well.
  • Return chicken to pan.
  • Reduce heat and simmer for about 20 minutes.
Top
