It was always a great treat to walk into the kitchen in the morning and smelling something in the oven. Muffins were a special treat that we all looked forward to. Blueberry have always been my favorite and grandma could make some of the best. Muffins are a great way to start a good breakfast.

Blueberry Muffins

  • 3/4 tsp salt
  • 1 egg beaten
  • 3/4 cup milk
  • 1/3 cup shortening melted
  • 1 cup blueberries fresh or frozen, well drained

  • Sift together dry ingredients. Combine egg, milk and oil. Add wet ingredients to dry ingredients and mix until just moistened. Toss blueberries in 2 tablespoons sugar. Gently fold berries into batter. Spray muffin pan with nonstick spray or use muffin cups. Fill 2/3 full and bake at 400 degrees for 25-30 minutes.
