In a mixing bowl blend together eggs, buttermilk, oil and bananas until well combined.
Sift together all dry ingredients and add to wet mixture and mix well. (At this time if you like you can fold in chopped nuts.)
Pour batter into a loaf pan that has been sprayed with nonstick spray.
Bake at 325 for about 1 hour and 20 minutes or until a knife inserted in the middle comes out clean.
Cool completely. Cut bread into about ½ inch slices.
